'Healthy' Orange and Vanilla yogurt Cake.

If you follow me on twitter {Ooh sneaky social media plug- if you want to follow me you can do so here!}  you may have seen that last week I did some baking- this delicious orange and vanilla cake in fact! I stumbled upon this delicious on pintrest while looking for healthy recipes- now it may not be super healthy but its far better for you than your average eggs-butter-flour combo. Its dense but extremely moist thanks to the sweet orange syrup that you pour over while the cake is cooling! I have to give credit to Rachel from Rachel Cooks for this amazing cake; her version looks a thousand times better than mine and her blog is amazing, a flurry of delicious recipes to keep everyone in your household happy! She certainly puts my cooking to shame. So if you feel like whipping up a treat for your family and friends why not give this a shot.

First things first your going to have to pre-heat your oven to 350 degrees Fahrenheit or around 175 celsius. Then grease and line a 8-inch cake pan with non stick paper; the worst thing in the world is baking a cake, having the smell wafting through the house all day and then it gets stuck to the tin when you try to get it out! Trust me- the number of times i've forced my family to eat cake straight out of the tin is embarrassing {It still tastes the same I swear!} It's far easier just to spend an extra few minutes lining the tin. Once you've done the lining business sift together the plain flourwholemeal flour and the baking powder. In a second bowl combine the greek yogurt, one cup of the caster sugareggs, orange zest and the insides of the vanilla pod's. Put the empty vanilla bean pod's in a container with the remaining caster sugar- we'll combine this with the left over orange juice later to make that syrup.

Slowly fold the dry ingredients into the wet ingredients until they are just combined. It's so, so important that you make sure not to over mix the ingredients as the gluten strands in the flours will tighten and cause your cake to be tough and not very nice :( Once it's all mixed together pour the batter into your pre-lined tin and pop it in the oven for 40-50 minutes or until a knife comes out clean.  While thats baking you can get onto your syrup. Combine the remaining sugar, vanilla pods and the juice of your zested oranges in a small pot over a medium heat until all the sugar is dissolved. Once all the sugar is dissolved take the syrup off the heat and leave it to cool slightly while your cake is cooking. If you want to go the extra mile and add some candied oranges to your cake all you have to do is make a simple sugar syrup which is basically one part sugar to one part water, thinly slice some oranges and boil them in the syrup for around 15 minutes or until the white 'pith' goes clear. Leave them to cool on a sheet of baking paper until your ready to add them to your cake. *I used one cup of caster sugar, one cup of water and one orange!

When your cake is ready to come out of the oven {You'll know when its ready when a butter knife can be inserted into the middle of the cake and it comes out clean} let it cool in the tin for 15 minutes before transferring it to a clean rack. This is the fun bit- with a knife or skewer punch some tiny holes into your cake, this will help get the syrup into every nook and cranny and leave your cake super moist. Then start ladling you syrupy goodness over your cake. If the syrup runs off the cake and into the tin or rack that its sitting on just grab a spoon and keep ladling it on top. When your out of syrup add the candied orange's or whatever you've chosen to garnish it with. I decided to add the sugar-fied vanilla beans as well just for decoration- I wouldn't recommend eating them! So there you go; a semi-healthy delicious cake that could almost put your Nannas cooking to shame; actually who am I kidding- nannas cooking will always be the best!

Glam Your Life // DIY Coconut Coffee Scrub

The humble coffee scrub has definitely been doing the rounds on the beauty circuit over the last few months! It seems like theres a new formulation or brand popping up every time I open my browser each claiming to do better than the last. Using a scrub- particularly a coffee scrub can help your pretty pins in so many ways; Ground coffee can help increase blood flow and stimulate the skin helping with cellulite and stretch marks, Coconut Sugar {Or any type of coarse sugar for that matter} can help out in smoothing your lumps and bumps and the Coconut oil helps to leave your skin smooth after use! Now I'm a self confessed scrubber, I love how gorgeous and smooth your body feels after but the only downfall with our new found love for scrubbing in the shower is the price. I'm yet to find a decent scrub that is under $15; so instead of giving away my hard earned pennies to a big corporation why not make your own!?! It's super easy and your get far more scrub for your money.

For a coconut and coffee scrub all you have to do is melt 1/4 of a cup of coconut oil in the microwave until it goes clear, let it sit for a few minutes until it comes back down to room temperature. Then add 1/2 a cup of ground coffee, 1/2 a cup of coconut sugar or brown sugar whichever is easier for you to find and a teaspoon of ground cinnamon. Mix it all together and your done! It's that easy, if you feel like switching it up a bit try adding a few drops of peppermint essence, some orange rind or even the insides of a vanilla bean- the possibilities are endless :)

Find a nice jar or reuse and old candle pot like i've done! This would be an amazing present to give to a friend or family member, just add a round of cloth to the top and secure it with a pretty ribbon. And don't forget to include a scoop; I'm pretty sure you can find miniature spade on ebay somewhere, you could even give this to a friend who really enjoyed gardening with a few flowers sprouting out from the top... right Amy calm down your bordering on weird now ha! Let me know what your favourite scrub is or if you've ever made your own :)

Weekly Catchup // Eighteenth May

Today, instead of studying like I was intending on doing I decided to bake; Something that I haven't really done much of in the last few months. I decided to make a recipe that I found on pintrest- a delicious orange and vanilla cake that was under the heading 'healthy'. With the ingredients including wholemeal flour, oranges and greek yogurt I'd say this is still a treat- but with a little less guilt attached! If you want to find out what the cake ended up looking like; or if you want the recipe it'll be up later in the week :)

It's been a social media frenzy over here at Amy Grace; me being not very tech savvy I signed up to pintrest not realising exactly what it was. I've since become obsessed- an entire website dedicated to stunning photos {The majority of anyway} what more could you want in life! It's become a part of my morning procrastination routine. Does anyone else have to check a bazillion apps before they can ever get out of bed? I certainly do; it's almost like if I don't check my instagram my morning just cannot go on! Please tell me i'm not the only one :(

Just a little encouraging photo for all you lovely ladies that are having a hard time out there; I know at times I can struggle with getting the motivation to get things done. Wether it be at work, school or in your relationships- some things may seem daunting or undoable but once you've finally conquered your fears and pushed through the you are always left feeling so relieved and rewarded

And lastly; Oh my Gosh this was the most amazing drink I have ever tasted! I praise you Lotus Story on the most delectable homemade lemonade I have ever, ever tasted in my life. I felt as though I was drinking liquid lemon curd; brilliant stuff! If your ever in the glebe area of Sydney take a wander over to Broadway and visit the Lotus Story on Smail street; you can't miss it and I guarantee you won't regret it, the food looked amazing and the interior was so relaxing that you'll feel at home straight away!

lots of love,
